Ingredients:  
3 cloves garlic ( 1 for inside of jar )
1 cup kosher salt
zest of 2 lemons- minced
1 tablespoon fresh rosemary - minced
1/4 to 1/2 teaspoon fresh ground pepper

Directions:
Directions:
place all ingredients in food processor and pulse 2-3 times
place mixture in jar, pressing garlic clove down in middle of salt
let set 3 days before using

chicken: place 3 teaspoons of mixture inside washed and dried chicken, also 1/2 lemon.
rub oil over chicken and roast at 425 for 1 hour.

also good on potatoes in oven brushed over fish, etc.
