20 oz. Ground Beef
1-16 oz. can whole tomatoes
1 pkg. taco seasoning
1 onion
6 oz. cottage cheese
6 oz. low fat cheddar cheese
2 eggs slightly beaten
16 tortillas
tomatoes & lettuce chopped

Brown meat w/ onion, drain.
Add tomatoes with juice and taco seasoning. Simmer 5 minutes uncovered.
In bowl combine cottage cheese, cheddar cheese and eggs. Place 4 tortillas on bottom of greased 8x12 pan, overlap 8 tortillas around sides of baking dish. Spoon meat mixture evenly on dish, top with 4 tortillas.
