1 pound large peeled and deveined shrimp
3 Tbsp soy sauce
1 clove garlic, finely chopped
2 Tbsp vegetable oil
1 red pepper, coarsely chopped
1 onion, coarsely chopped
16 snow peas, ends trimmed
2 Tbsp water
Pinch of pepper

1) In medium mixing bowl, combine the shrimp, 2 Tbsp of soy sauce, and the garlic. Stir with wood spoon, set aside for 10 min.
2) Add the vegetable oil to the wok or frying pan and set over med-high heat. When oil is hot (flick a drop of water into it; it should sputter - this is cool), add red pepper and onion. Cook stirring constantly with 2 spatulas or spoons until the pepper is slightly soft, about 3 min. Add snow peas and shrimp mixture. Continue stirring until the shrimp turn pink and are cooked through - about 3 min more.
3) Using hot pads, carefully remove the frying pan or wok from heat. Add remaining 1 Tbsp soy sauce, the water, and pepper. Stir until blended, serve with rice.
