3 lb spinach
3 T unsalted butter
1 1/2 small onion
3/4 c heavy cream
nutmeg
salt & pepper

Directions:
Directions:
Wash and drain spinach - don't dry.

Heat large skillet over medium heat and add spinach. Cook until wilted, remove from pan, pressing out as much liquid as possible.

Heat butter and add onions until soft (aprox 4 minutes).

Stir in spinach, cream, pinch of nutmeg and season with salt and pepper.

Cook until almost all cream is absorbed.
