1 lb. hamburger or chicken
8 oz. cream cheese
1/4 c. onions, chopped
1 clove minced garlic (or 1/4 t. garlic powder)
1 can evaporated milk
1 c. milk
2 t. cornstarch
1 t. salt
1/2 c. green chilies (chopped)
1/2 t. cumin powder
8 oz. cheddar cheese (shredded)
1 pkg. corn tortillas (about 10-12) chop into 1" pieces

Directions:

Brown hamburger or chicken. Drain fat.
Add spiced and chillies. Stir well. Add crean cheese, can milk, and cornstarch. Stir to blend well. Add more milk (regular) if too thick.
Stir in corn tortillas.
Pour mixture into 9x13 casserole dish (or two 8x8 dishes - freeze one for later). Top with shredded cheese to cover mixture.
Bake at 350 for 30 minutes (until cheese is lightly browned)

This dish tastes great with pinto beans, and spanish rice. Add a small tossed salad for lovely presentation colors (Teresa would love that idea!)
