2 c cooked rice
2 c (8 oz) shredded Monterey Jack Cheese
1 1/2 c cooked chopped chicken breast
1 can Carnation Evaporated Milk
1/2 finely chopped onion
2 large eggs, lightly beaten
1/4 c finely chopped fresh cilantro
2 T butter, melted
1 T diced jalapenos (optional)

Preheat oven to 350. Grease 2 qt casserole dish. Combine ingredients well in dish. Bake 45-50 minutes or until knife inserted in center comes out clean.
