1 pkg. of flour tortillas cut in 1" wide rectangles
3 cups cooked turkey (shredded works better)
1/4 cup melted butter
1/2 cuo chopped onions
2 cans Cream of Mushroom Soup
1 can Ortega sauce (whatever degree of heat you prefer)
1 - 1/2 tsp chili ppwder
1 can chicken broth
1 cup grated cheddar cheese

Directions:

Lightly grease rectangular casserole dish. Then layer the tortilla strips to cover the bottom. Layer about 1/2 of the turkey over the tortillas. Next mix all remaining ingredients except the cheese in a bowl. Ladle 1/3 of the mixture over the turkey. Lightly sprinkle cheese over the mixture and put down second layer of tortilla strips to cover. Repeat this process ending with tortilla layer, and spoon last 1/3 of liquid mixture over the top. Bake in a 350 oven for 20 minutes. Sprinkle on the remaining cheese when you remove it from the oven.
Additional notes:
If you desire, you can saute the onions and then mix all liquid ingredients. You can substitute olive oil for butter. You can use the green label (98% fat free Campbell soup). You can use shredded low fat cheddar that melts well and tastes great. The same goes spraying the casserole dish with Pam instead of greasing it. You can also substitute corn tortillas for a change in flavor if you prefer. These adjustments would be better for diabetic menu or heart patients who must watch fat.
