Turkey meatballs:
1 lb ground turkey
1/2 Italian parsley
1 egg
1 Tbsp water
1 cup Italian or plain bread crumbs
1/2-1 cup parmesan cheese
8 cups of chicken stock
1 bunch of escarole chopped
1/2 cup chopped carrots
1 cup of canneneli beans cooked
1/2 cup cooked orzo

Directions:
Directions:
Mix turkey meat with damp bread crumbs, egg, parmesan cheese to make meatballs. Add to boiling broth. Cook for 15-20 minutes before adding carrots and escarole. Add orzo and beans at the end. Finish with more parmesan as needed. I love this soup in winter. Yummm.
