6-8 eggs
1-2 baked chopped potatoes
1 tomato chopped or minced sundried tomato 1 tsp
1 green or red pepper
1/2 onion chopped
ham or pepperoni chopped
1-2 tblsp olive oil

Directions:
Directions:
In a deep fry pan that has a lid
saute in olive oil and reduce tomato, onion , pepper and add ham or pepperoni to taste add potato until warm and seasoned. Beat eggs well and add to pan and cover, lower heat and cook until eggs are no longer runny and you are able to flip tortilla, cook other side until brown. Serve with salsa or hot sauce. Great paired with a salad and chardonnay

Sometimes I just forget about the time look up and dinner now....ahhhh...this is a really fast and filling meal. I microwave a potato while saute is happening. I have used ham , salami or no meat at all.
Aunt Grace told me her emergency dinner is a hot dog....
