Cannoli Shells
3 cups flour
1/2 cup sugar
1 tsp cinnamon
1/4 tsp salt
3 tblsp shortening
2 beaten eggs
3 tblsp white vinegar
3 tblsp cold water

Cannoli Filling
6 cupsRigotta cheese
21/2 cupssugar
4 tsp vanilla
1 cup citron chopped
1/2 cup german chocolate chips
nuts chopped
cherries

Directions:
Directions:
To make shells, sift flour,sugar,cinnamon,and salt. Cut in shortening. Stir in beaten eggs. Blend in water and vinegar, 1 tbsp at a time. Roll out to thin dough. Use a round water glass or cut out to make shell, place around tube form and deep fry until it floats up. Drain and cool. Fill shells when ready to serve with beaten cheese, sugar, and vanilla. Mix in citron and chips. Dip ends into chopped nuts and put cherry in one end. Dress them up with sifted powdered sugar and dash of cinnamon.
