1 lb. spaghetti
4 eggs
1/4 c grated Parmesan or Romano cheese
Garlic to taste
Salt to taste
Parsley to taste
A dollop of extra virgin olive oil

Directions:
Directions:
Cook spaghetti according to package directions. While the spaghetti is cooking scramble the eggs well with the remaining ingredients. Drain but don't shake the spaghetti so that some moisture remains. Put spaghetti back in the pot on low heat and pour in the egg mixture. Continue to stir while eggs cook gently in the spaghetti to desired hardness being sure to scrape the bottom of the pot.
Serve immediately
