1 8-oz. pkg. cream cheese, softened
1/2 tsp. garlic powder
1/2 tsp. lemon pepper seasoning, if desired
6 large or 12 regular-size flour tortillas
1 large bunch fresh spinach leaves, cleaned and stems removed
1-1/2 c. (6 oz.) finely grated Cheddar cheese
1-1/2 c. (2 medium) shredded carrots

Directions:

In small bowl, blend together cream cheese and seasoning(s). On each tortilla, spread a layer of cream cheese mixture. Layer spinach leaves, cheese and carrots on top. Roll up and secure with toothpicks. Slice each roll into 1-1/2 inch pieces. Serve w/ salsa for dipping, if desire.

Hints: To keep tortillas soft until ready to use, wrap tightly in plastic wrap or cover with damp towel. For extra zip, add Dijon mustard to the cream cheese mixture.
