1/2 c. mayo
1 (16 oz.) can pinto beans, drained and mashed
1 c. shredded Cheddar cheese
1 can chopped green chilies, drained
1/4 tsp. hot pepper sauce
1/4 c. sliced jalapeno peppers, chopped

Directions:

Combine all ingredients; stir to mix well. Serve with tortilla chips.

To follow the original recipe, which calls for this dip to be baked: spoon mixture into small ovenproof dish. Bake at 350 for 30 minutes or until bubbly.

This recipe came from the Kingsway Regional Bus Drivers cookbook. Jeannie tried it, added the jalapeno pepper, and it's now one of our favorites. It's quick and easy!
