1 bunch young carrots with tops (not baby)
1/4 c. olive oil
salt and fresh ground pepper
4 T. (1/2 stick) butter
1 orange zested, then halved
1 T. brown sugar
1 tsp. ground cumin
1 tsp ground cinnamon

Directions:
Directions:
Preheat oven to 350 degrees. Cut off all but 1" of the carrot tops leaving a little green. Put carrots in shallow roasting pan, add oil and season with salt and pepper. Turn to coat carrots Roast for 30 minutes till fork tender. In the meantime, melt butter in a skillet over med-high heat. Swirl until butter becomes brown and nutty. Squeeze in orange juice from both halves, add zest, brown sugar, cumin, and cinnamon and cook about 2 minutes until syrupy. Remove carrots from the oven and drizzel with syrup. Serve.
