1/4 cup olive oil
1 large onion, thinly sliced or chopped
3 cloves garlic, minced
6 lbs collard, kale, turnip and/or mustard greens, cleaned
salt and freshly ground pepper to taste
Opt: Red pepper flakes, to taste

Directions:
Directions:
In a heavy skillet, heat the olive oil. Saute the onion and garlic until softened, add the greens and the red pepper flakes, if using. Saute for about 3-4 minutes until wilted, but still green. Season with salt and pepper. Serve.

I bring fresh picked collard greens to Eve's for Thanksgiving and instead of cooking them the traditional southern way for hours with fat back, I found this recipe. Don't get me wrong, the traditional southern way is THEE best, but this is a close second and quicker.
