10 Med Potatoes
2 Eggs
Salt & Pepper (to taste)
Parsley
Flour

Directions:
Directions:
Peel, Boil & Mash Potatoes.
Add Salt, Pepper & Parsley (to taste)
Let Cool.
In separate bowl beat Eggs.
Add Eggs to Potatoes & mix well.
Add Flour to Potatoes (about 8 heaping tbs)
Mix together till mixture is firm.
Roll Potatoes into hand sized Balls (if mixture is sticking to much to hand add more flour little at a time).
Carefully place Dumplings into RAPIDLY BOILING water.
When Dumplings float to top of water cook 10 min more.
