Pecan Shrimp with Orange Dipping Sauce Recipe

1-1/2 large shrimp, peeled and deveined with tails left intact
1 tsp seasoned salt
3 egg whites
1-1/2 cup Panko Japanese Bread Crumbs
3/4 cup ground pecans
2 Tbsp all purpose flour
Vegetable oil cooking spray

Orange Dipping Sauce
3/4cup orange marmalade microwave 20 sec
1/4 cup orange juice
1 tsp. stone ground mustard
1/2 tsp. dried crushed red pepper

Microwave marmalade in small glass bowl at High for 20 seconds or until melted. Stir in remaining ingredients. Serve immediately.

Sprinkle shrimp evenly with seasoned salt. Set aside.
Whisk egg whites in small bowl until frothy. Set aside
Combine panko, pecans and flour in shallow bowl.
Place a wire rack coated with cooking spray in an aluminum foil lined 15x10" jelly roll pan.
Dip shrimp, one at a time in egg whites and dredge in bread mix, arrange shrimp on rack. Coat shrimp evenly with spray.
Bake at 425 for 10-15 minutes or just until shrimp turn pink, turning after five minutes.
Serve with orange dipping sauce or several dipping sauces of your choice

I found this recipe in Mom's saved recipes. She saw me looking at it and said she hasn't tried it yet, but she wants to. So....someone can surprise her and prepare it for her next time she's around.
