1 cup sliced or slivered almonds, coarsely chopped
4 cups flour
4 eggs
1 2/2 T. grated lemon rind
5 Tbsp. butter, melted
4 tsp. baking powder
5 Tbsp. sugar, plus small amount to sprinkle on top
1 egg yolk, beaten

Preheat oven to 400

Place flour in a mixing bowl and make a well in the center. Break the eggs into the well, add the almonds, lemon rind, butter, baking powder and the 5 Tbsp. of sugar. Blend well.

Divide the dough into 5 pieces. Roll each on a lightly floured board to 1/2 " thickness, about 2' wide x 10" long. Continue until all dough is rolled out. Brush the tops of the rolled out strips with egg yolk and sprinkle with sugar. Bake 20 minutes or until tops are golden. Cut the strips while hot at an angle to make 3/4' biscotti cookies. Cool on wire racks.
