1 1/2 lbs. Brussels sprouts
3 tbs. good olive oil
3/4 tsp. kosher salt
1/2 tsp. freshly ground black pepper

Directions:
Directions:
Preheat oven to 400 F.

Cut the ends off the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt and pepper. Transfer them to a sheet pan and roast for 35 - 40 minutes, until crisp outside and tender inside. Shake the pan from time to time to brown the Brussels sprouts evenly. Sprinkle with more kosher salt (They really taste like French fries when they are salty!) and serve hot

This recipe works with asparagus just as well, if not better. Make sure that you use medium wide stalks, they crisp up the best. A squeeze of lemon to finish them, as well as some grated parmigiano reggiano makes them irresistible!
