1 beef tenderloin (about 3#
2 cloves of garlic, slivered
1 to 2 T olive oil
1 T gr black pepper
1 T fresh chopped thyme
Coarse salt, to taste

Directions:
Directions:
Preheat oven 425F, using tip of sharp knife, cut slits in tenderloin and insert garlic.
Brush the tenderloin with olice oil and rub it all over with pepper and thyme. Sprinkle with salt.
Place tenderloin on a rack in shallow pan and roast it for 15 min. Reduce oven temp to 350F and roast for 20 min for medium-rare; roast 5 min longer for medium. Let tendferloin rest before carving.
Slice the tenderloin 1/2-in thick. Serve with Mustard Horseradish Cream Sauce.
