1 c. dry lentils
5 c. water
1 med onion
1 c. chopped celery
1 c. sliced carrots
2 tsp. chicken bouillon
2 cloves garlic, minced
1/2 tsp. shredded lemon peel
1/8 tsp. ground red pepper
1 c. cooked chopped ham
2 c. chopped fresh spinach

Directions:
Directions:
Rinse and drain lentils. In a large saucepan combine water, lentils, onion, celery, carrots, bouillon, garlic, lemon peel and red pepper.
Bring to a boil and reduce heat. Cover and simmer 45 min.
Add ham and simmer uncovered 15 min. Stir in fresh spinach and serve.
