6 chicken legs, thighs or breasts
skinned, fat removed
Low fat or skim milk
1/2 tsp black pepper
1/3 c crushed cereal
or plain dry breadcrumbs
1/2 c grated parmesan cheese
1 Tbsp dried parsley flakes, crumbled


Directions:
Directions:
Cover chicken with milk in shallow dish.Refrigerate 30 minutes or longer. (milk helps tenderize chicken) combine remaining ingredients. Dip chicken in mixture to coat. Bake, uncovered, on greased baking sheet in preheated 375-degree oven 45 minutes or until fork tender. For a change, you can coat the chicken with barbecue sauce the last 10 minutes of baking.
