3-15.8 oz cans black-eyed peas
1-10 oz can diced tomatoes w/green chilies
1 small onion finely chopped
1 jalapeno pepper, seeded and minced
2 cloves minced garlic
1 cup chopped fresh cilantro
1 tsp salt
1/2 tsp black pepper
1 Tbs olive oil

Combine first 8 ingredients, toss gently w/olive oil. Serve with tortilla chips
