2 Full Racks, flip over to bone side and wrestle the silver skin off starting at small end. The skin covers the top of the bones and sometimes you will luck out and get it in one piece.

Dry Rub: 1 c. packed dark brown sugar.
Dry seasonings to taste. I buy Pappy's mixture but I think Emeril has one as well. Shake it with brown sugar, you want a strong smell.

Massage your meat top and bottom & place meat side up on a jelly roll pan that has been covered with foil. Bake 350 for about 35 minutes turning over to bone side up half way through. Reduce over to 200-225 turn meat sideup again and cover thoroughly with foil.

Forget about them for about 2 hours. Remove the foil they should be slightly pulling away from the bone. Increase the oven to 350 again and baste with favorite BBQ sauce (sometimes I mix the sauce and a "special jam" like peach & habanero). Do not cover with foil, 15 minutes meat side up and 15 minutes meat side down. Flip and make sure the top is covered with the sauce that has now tu rned into a glaze. If not bake them a little more. They taste good hot, warm or room temp. You will be glad you covered up your pan cause the sugar tends to burn a bit. Enjoy! Sue-Sue
